Filson Food: Fire Pit Dinner

Should you find yourself at camp strapped for ingredients and time, here’s a simple recipe that delivers a hearty meal for the whole crew.

Prep Time: 15 minutes
Total: 45 minutes
Serves: 4

Equipment:

  • Aluminum foil
  • Metal tongs
  • Work gloves or oven mitt
  • Campfire grate
  • Shovel

Ingredients:

  • Olive or vegetable oil
  • 16-oz ground beef or bison
  • 2-3 whole carrots, diced
  • 2 whole potatoes, diced
  • 1 bell pepper, diced
  • 1 large white or yellow onion sliced
  • 4 corn on the cob, shucked
  • 3-5 sprigs of rosemary, finely chopped
  • Salt & pepper

1. Make your campfire.

Camp fire meals are simple, but only with a great base from your fire. Make sure your cooking area is level and clear to evenly cook your meal and avoid unwanted fires from sparks and embers.

2. Chop vegetables evenly.

While the fire is doing its thing, slice, dice, and prep all the parts of the meal. Evenly chopped and sliced ingredients simplify the cooking process and assures a fully cooked meal.

3. Divide vegetables and meat evenly on a large piece of tin foil.

Making your packets is as simple as grabbing a little of the vegetables and meat and dividing portions evenly or for how hungry each person is.

4. Season packets.

Season your packets well with rosemary, salt, pepper, a light drizzle of oil and a bit of water (or beer) over the top. Be as generous or as sparing as you prefer with this step.

5. Wrap the foil tightly to ensure juices and steam don’t escape.

Once the packets are in the fire, they will get hot, so it’s important to wrap each one tightly so you don’t get burned by a leaking packet. This step also ensures the flavors are sealed in.

6. Season corn & wrap tinfoil tightly.

Repeat the previous steps for the corn – first, by shucking it to remove the husk and hairs. Then, seasoning them with a bit of butter and salt and pepper, wrap tightly with a large piece of tinfoil for each cob. Again make sure you wrap these packets tightly.

7. Place packets in the fire.

Using gloves or tongs, place meat and vegetable packets directly onto the coals. When placing directly in the fire, take extra precaution and shovel a few coals on top for even cooking.

8. Cook mixture for approximately 15-20 minutes & corn approximately 10 minutes.

Use the shovel to remove coals and the tongs to remove the packets from heat. Unwrap to check progress and return to heat if things need more time. Place the corn on the fire about halfway through and cook for approximately 10 minutes. Remove all items from heat and serve.
